  • 2 tablespoons brown sugar
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla bean paste (or vanilla extract)
  • 1/2 cup vegan butter (room temperature)
  • 3/4 cup sugar (½ cup for dough, 2 tablespoons for rolling)
  • 1/4 cup light brown sugar
  • 1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water)
  • 1 1/2 cups + 3 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Prepare the filling: In a small bowl, mix water and cornstarch until smooth. Melt vegan butter in a saucepan over low heat, stirring in chopped pecans, brown sugar, maple syrup, and vanilla paste until thickened.
  2. Make the cookie dough: Cream together room temperature vegan butter and sugars until fluffy. Add the flax egg and vanilla paste. Gradually incorporate flour, cinnamon, baking powder, and salt until combined.
  3. Assemble cookies: Preheat oven to 350°F (175°C). Scoop tablespoon-sized dough portions, flatten slightly, add about half a teaspoon of filling in the center, cover with another scoop of dough, roll into balls and coat in sugar.
  4. Bake cookies: Arrange on a baking sheet and bake for 12-15 minutes until golden around the edges.
