  • 7 oz (200 g) block of feta cheese
  • 2 tablespoons olive oil (divided)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 head of garlic (top sliced off)
  • 1 lemon (quartered)
  • 1 tablespoon honey
  • ¼ cup (20 g) fresh basil, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and cube the potatoes into bite-sized pieces.
  3. Toss cubed potatoes in a large bowl with 1 tablespoon of olive oil, thyme, oregano, salt, and black pepper until well-coated.
  4. Spread potatoes evenly on a baking sheet, placing the feta cheese in the center and surrounding it with the potatoes. Add the sliced garlic head and lemon wedges nearby.
  5. Drizzle everything with the remaining olive oil before roasting for about 50 minutes until golden brown and crispy.
  6. Once done, drizzle honey over warm potatoes and feta; garnish with chopped basil before serving.
