  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup light brown sugar
  • ¾ cup granulated sugar
  • ¾ cup softened unsalted butter
  • 1 teaspoon clear vanilla extract
  • 1 egg (room temperature)
  • 1 cup white chocolate chips
  • ½ cup chopped pistachios

Instructions

  1. Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, pistachio pudding mix, baking soda, and salt.
  3. In another bowl, cream together brown sugar, granulated sugar, and softened butter until fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually mix in the dry ingredients until just combined.
  6. Fold in white chocolate chips and chopped pistachios.
  7. Chill the dough for at least 30 minutes, then scoop rounded tablespoons onto the prepared baking sheet.
  8. Bake for 12-14 minutes until set but not browned. Press extra white chocolate chips on top while warm.
