  • 10 oz mini vegan marshmallows (about 5 cups)
  • 1/2 cup peanut butter
  • 6 cups Rice Krispie cereal
  • 8 oz chocolate chips (about 1 1/3 cups)
  • 2 teaspoons vegetable oil

Instructions

  1. Prepare a 9×13 inch pan by lightly greasing it with butter or non-stick cooking spray.
  2. In a large saucepan over low heat, melt the unsalted butter, mini vegan marshmallows, and peanut butter together while stirring gently until smooth.
  3. Remove from heat and stir in the Rice Krispies until well coated.
  4. Press the mixture firmly into the prepared pan using non-stick spray on your hands to prevent sticking.
  5. In a microwave-safe bowl, melt the chocolate chips in 45-second intervals, stirring in between until nearly melted. Stir in the vegetable oil until smooth.
  6. Pour the melted chocolate over the pressed Rice Krispie mixture and let it set at room temperature for about two hours.
