  • 1 lb ground chicken
  • 1 medium onion, diced
  • 1 cup baby spinach, chopped
  • 3 tablespoons olive oil
  • 1/2 cup breadcrumbs
  • 1/4 cup Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Sauté onion in olive oil over medium heat until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
  2. In a large bowl, combine sautéed onion and garlic with chopped spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix until well combined.
  3. Form the mixture into eight patties (½ inch thick).
  4. Heat remaining olive oil in a skillet over medium heat and cook patties for 5-6 minutes on each side until golden brown and cooked through.
  5. Serve warm with your choice of garnishes or dipping sauces.
