  • 1 tablespoon cornstarch
  • 1/4 teaspoon lemon zest
  • 2 large egg whites
  • 1/4 teaspoon cream of tartar

Instructions

  1. Prepare the cookie dough by mixing flour, powdered sugar, and salt. Cut in chilled butter until crumbly. Form into a ball, wrap in plastic, and chill for 30 minutes.
  2. Preheat oven to 350°F (175°C). Roll out chilled dough and cut into circles; bake for 8-10 minutes until lightly golden. Cool completely.
  3. Make the lemon filling by whisking lemon juice, sugar, egg yolk, cornstarch, and zest over medium heat until thickened. Cool completely.
  4. Beat egg whites with cream of tartar until foamy; gradually add sugar until stiff peaks form.
  5. Assemble by adding cooled lemon filling to cookies and topping with meringue. Broil for 1-2 minutes until golden.
