  • 1/2 cup unsalted butter, cold and cubed
  • 34 large peaches, peeled, pitted, and sliced
  • 1/2 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. In a bowl, mix flour, sugar, and salt. Cut in cold butter until crumbly; press into the prepared pan. Bake for 15–18 minutes until lightly golden.
  3. Toss sliced peaches with sugar, flour, lemon juice, and vanilla in another bowl. Allow to sit while preparing the topping.
  4. For the crumb topping, combine flour, sugars, cinnamon, and salt; stir in melted butter until crumbly.
  5. Spread peach filling over cooled crust and sprinkle crumb topping on top. Bake for 45–50 minutes until golden brown.
  6. Cool completely before slicing into squares.
