  • 1/4 cup vegetable oil
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • ½ cup brown sugar (packed)
  • ⅓ cup granulated sugar
  • ½ teaspoon ground cinnamon
  • 1 cup apple cider
  • ⅓ cup water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking powder, salt, granulated sugar, cinnamon, and ginger.
  3. In a large bowl, combine applesauce, milk, vegetable oil, molasses, and vanilla extract until smooth.
  4. Gently fold the dry ingredients into the wet mixture until just combined.
  5. Pour the batter into an 8×11-inch baking dish and spread evenly.
  6. In another bowl, mix brown sugar, granulated sugar, and cinnamon for the topping and sprinkle over the batter.
  7. Carefully pour apple cider and water over the top; do not stir.
  8. Bake for about 40 minutes or until set in the middle.
  9. Let cool for around 5–10 minutes before serving.
