  • ¼ cup butter (softened)

  • 1 ½ cup powdered sugar
  • 2 teaspoon molasses
  • ¼ teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8 x 8 baking dish.
  2. Whisk together flour, baking soda, ginger, cinnamon, and pumpkin pie spice in a bowl.
  3. In another bowl, beat cold butter with molasses, corn syrup, and dark brown sugar until smooth. Add milk and egg; mix until combined.
  4. Gradually add dry ingredients to wet mixture and stir just until combined.
  5. Pour batter into the prepared dish and bake for about 45 minutes or until a toothpick comes out clean.
  6. For frosting: Beat softened cream cheese and butter until creamy; gradually add powdered sugar, then mix in vanilla and molasses until well blended.
  7. Once cooled completely, frost the cake generously.
