  • 1 lb ground beef
  • 1 large egg
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 2 tbsp chopped parsley
  • 3 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter
  • 5 cloves garlic, minced
  • ¼ tsp red pepper flakes (optional)
  • 1 tbsp lemon juice
  • 1 tbsp chopped parsley
  • Salt to taste
  • 12 oz linguine
  • 1 tbsp butter
  • ¾ cup heavy cream
  • ¾ cup grated Parmesan
  • Salt & pepper to taste
  • Pasta water (as needed for consistency)

Instructions

  1. In a bowl, mix ground beef with egg, breadcrumbs, Parmesan cheese, chopped parsley, minced garlic, salt, and pepper until combined. Form into 20–24 meatballs.
  2. Heat olive oil in a skillet over medium heat. Sear meatballs until browned on all sides (6–8 minutes). Remove and set aside.
  3. In the same skillet, reduce heat to low and add butter and minced garlic. Cook for 1–2 minutes until fragrant. Stir in lemon juice and parsley, then return meatballs to the skillet for 5–7 minutes.
  4. Cook linguine according to package instructions; reserve ½ cup pasta water. In another pan, melt butter and heavy cream; stir in Parmesan until melted.
  5. Serve meatballs over creamy linguine and drizzle with extra garlic butter from the skillet.
