  • ½ cup beef broth (or vegetable broth)
  • 4 large Yukon Gold potatoes
  • 1 tablespoon butter (for greasing)
  • 1 cup shredded Gruyère cheese (or Swiss, cheddar, or mozzarella)
  • ½ cup grated Parmesan cheese
  • 1 cup heavy cream or whole milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon fresh thyme leaves
  • Fresh thyme sprigs (for garnish)
  • Extra Parmesan cheese (for topping)
  • Crispy fried onions (optional)

Instructions

  1. Sauté sliced onions in a skillet with butter and olive oil over medium heat until soft and golden brown (about 20 minutes).
  2. Stir in sugar (if using), garlic powder, thyme, and broth; simmer for 5 minutes.
  3. Grease a baking dish and layer half the sliced potatoes, half the onion mixture, and half the Gruyère cheese. Repeat layers.
  4. In a bowl, mix heavy cream with salt, pepper, and fresh thyme; pour over layered ingredients and top with Parmesan.
  5. Cover with foil and bake at 375°F (190°C) for 45 minutes. Remove foil and bake for an additional 10-15 minutes until golden brown.
