  • 1 small butternut squash, peeled and diced (about 3 cups)
  • 2 tbsp olive oil
  • 1½ cups orzo pasta
  • 3 cups vegetable broth
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • ½ cup grated Parmesan cheese (or nutritional yeast for vegan)
  • ¼ cup heavy cream (or plant-based cream)
  • 2 cups baby spinach, roughly chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Toss diced butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for about 25–30 minutes until tender and caramelized.
  2. In a large saucepan over medium heat, melt butter. Sauté minced garlic for about one minute until fragrant. Add orzo pasta and toast lightly for two minutes.
  3. Pour in vegetable broth and simmer for about 10–12 minutes until the orzo is tender, stirring occasionally.
  4. Stir in grated Parmesan cheese and heavy cream until creamy. Add chopped spinach and cook just until wilted.
  5. Gently fold in roasted butternut squash, adjust seasoning if necessary, and serve warm.
