  • 1/2 cup breadcrumbs (panko or regular)
  • 1 egg
  • 8 oz mushrooms (sliced)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • Fresh parsley (for garnish)
  • 2 cloves garlic (minced)
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp dried thyme
  • 2 tbsp olive oil (for searing)
  • 2 tbsp butter

Instructions

  1. In a large bowl, mix ground chicken, breadcrumbs, egg, grated Parmesan cheese, minced garlic, salt, pepper, and thyme until just combined. Shape into golf-ball-sized meatballs.
  2. Heat olive oil in a skillet over medium heat. Sear meatballs until browned on all sides; remove from skillet.
  3. In the same skillet, melt butter and sauté mushrooms and garlic until golden brown.
  4. Stir in heavy cream and chicken broth; bring to a gentle simmer. Add meatballs back into the sauce to heat through.
  5. Serve hot, garnished with fresh parsley and extra Parmesan cheese.
