  • 8 eggroll wrappers
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 jalapeño peppers, seeded and finely chopped
  • 1 green onion, finely chopped
  • Vegetable oil, for frying

Instructions

  1. In a mixing bowl, combine softened cream cheese, cheddar cheese, jalapeños, green onion, garlic powder, salt, and pepper until well mixed.
  2. Lay an eggroll wrapper flat on a clean surface. Place about 2 tablespoons of the filling diagonally across the center. Fold the bottom corner over the filling, fold in the sides, and roll tightly to seal.
  3. Heat vegetable oil in a skillet to 350°F (175°C). Fry eggrolls seam side down in batches for about 3-4 minutes or until golden brown.
  4. Drain on paper towels and serve hot with your favorite dipping sauce.
