  • 2 teaspoons freshly squeezed lemon juice
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons light brown sugar
  • 1 1/2 teaspoons cornstarch
  • 1/3 cup all-purpose flour
  • 1/3 cup light brown sugar
  • 1/3 cup quick-cooking oats
  • 3/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 2 1/2 tablespoons unsalted butter, melted
  • Caramel sauce for drizzling

Instructions

  1. Preheat your oven to 325°F (163°C) and line a standard cupcake pan with paper liners.
  2. In a bowl, mix graham cracker crumbs, sugar, cinnamon, and melted butter to form the crust; press into cupcake liners and refrigerate.
  3. Combine flour, brown sugar, oats, cinnamon, and nutmeg for the streusel topping; set aside in the fridge.
  4. Beat cream cheese and sugar until smooth; add vanilla, flour, and egg; mix gently.
  5. Fill each crust with cheesecake filling, then top with a mixture of chopped apples tossed in lemon juice and spices.
  6. Sprinkle the streusel topping over each mini cheesecake.
  7. Bake for 28-30 minutes until edges are set; cool before chilling in the refrigerator.
