  • 1 teaspoon cornstarch
  • 1 teaspoon baking powder

  • ½ teaspoon salt
  • 1¼ cup light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 4 tablespoons unsalted butter, melted for coating
  • 2 tablespoons apple cider for coating
  • ¾ cup granulated sugar for coating
  • 2 teaspoons ground cinnamon for coating
  • 1 cup powdered sugar for glaze
  • ½ teaspoon vanilla extract for glaze
  • 12 tablespoons apple cider for glaze

Instructions

  1. Reduce apple cider in a saucepan over medium-high heat until it reaches about ¼ cup; set aside.
  2. Brown the butter in another saucepan over low heat until golden; let cool.
  3. Mix flour, baking powder, baking soda, cornstarch, and salt in a bowl.
  4. In a mixing bowl, whisk cooled butter with sugars, then add egg, egg yolk, reduced cider, and vanilla until combined.
  5. Gradually mix dry ingredients into the wet mixture until just combined. Let dough rest.
  6. Preheat oven to 375°F (190°C). Scoop dough onto lined sheets and bake for 9-11 minutes.
  7. Cool on sheets for five minutes before transferring to racks.
  8. Brush cookies with melted butter mixed with apple cider, then roll in cinnamon sugar.
  9. Whisk powdered sugar with vanilla extract and apple cider until smooth. Drizzle this glaze over each cookie.
